A Classroom Without Textbooks

When Nguyen Thi Huong started teaching English at a secondary school in Can Tho twelve years ago, she followed the textbook page by page. "My students could fill in grammar exercises perfectly," she says, "but when a tourist asked them a question in the street, they froze."

Three years ago, she decided to try something different with one of her classes. For a whole term, she replaced the textbook with games: board games, role-plays and a weekly quiz show in which teams competed for points. The only rule was that students had to use English for the entire lesson.

The first few weeks were noisy and, Ms Huong admits, a little chaotic. Some parents worried that their children were just playing instead of learning, and two of them came to the school to complain. However, by the end of the term, the class's speaking test results were the best in the school. Their written grammar scores were slightly lower than those of other classes, but Ms Huong believes this gap can be closed with short weekly writing tasks.

Other teachers at the school have since started to use some of her games, although most still use the textbook for at least half of each lesson. The head teacher, Mr Lam, says he is happy for teachers to experiment, but he wants to see results from more classes before making changes across the school.

Ms Huong's students seem to have no doubts. "Before, I was scared of making mistakes," says fourteen-year-old Gia Han. "Now I just try. If I'm wrong, my team helps me."

Review: Green Basket Cooking Day

I've done cooking classes in three countries, and most of them follow the same pattern: you stand in a clean kitchen, a chef shows you what to do, and you copy. The Green Basket Cooking Day, in a vegetable village a few kilometres outside Hoi An, is different and, for the most part, better.

The day begins at 8 am, when a guide collects you from your hotel by bicycle. If you are not confident on a bike, you can ask for a taxi instead, but you will miss a lovely ride past the rice fields. At the village, you spend the first hour working with a farmer. On my visit, this meant watering plants with two heavy cans hanging from a pole on my shoulders. It looks easy. It is not.

After that, you pick the herbs and vegetables you will use, and the cooking lesson starts in an open kitchen under a big tree. Our teacher, Ms Sen, was patient and funny, and she explained not only how to cook each dish but also why Vietnamese cooks balance sweet, sour, salty and spicy flavours. We made four dishes, including a pancake that I have since cooked at home twice.

There are a few things to know before you book. Groups can have up to sixteen people, which means it can be hard to hear the teacher at the back. The day also finishes later than advertised: ours ended at 3 pm instead of 2. And while lunch is included, drinks other than water are not.

Overall, this is a day for people who want to understand food, not just follow a recipe. If you only want a quick lesson, there are cheaper and shorter classes in the old town. But if you have a free day and some energy, I can't recommend it highly enough.

  1. How is this class different from most others the writer has done?
    • It takes place in a very clean kitchen.
    • A chef shows guests what to copy.
    • It is held in a hotel kitchen.
    • Guests work on a farm before they cook.
  2. How does the guide usually take guests to the village?

    • It was the best part of the day.

  4. What did the writer like about Ms Sen?
    • She cooked very quickly.
    • She spoke many languages.
    • She explained the reasons behind the cooking.
    • She let guests choose the dishes.
  5. What has the writer done since the class?
    • booked another class
    • visited the farm again

  6. Which problem does the writer mention?
    • People at the back may not hear well.
    • Lunch is not included.
    • The group is too small.
    • The day finishes too early.
  7. Who does the writer think should choose a different class?

The Girl Who Turned Rice Straw into Paper

Every year after the harvest, farmers in many parts of Vietnam burn the rice straw left in their fields. The smoke makes the air dirty, and in some places people find it hard to breathe for days. When Dinh Thu Trang was in Grade 11, she saw her grandmother coughing during the burning season and decided to do something about it.

With help from her chemistry teacher, Trang spent eight months testing ways to turn rice straw into paper. Her first attempts produced paper that was too weak to write on. The breakthrough came when she added a small amount of banana leaf fibre, which made the paper much stronger.

Trang entered her project in a national science competition and won second prize. More importantly, a company that makes notebooks contacted her, and it now buys straw from fifty farming families in her home province. The farmers earn extra money, and less straw is burned.

Trang is now studying environmental engineering at university in Hanoi. She hopes to find a way to make the paper waterproof so that it can replace plastic bags in markets.

  3. How many months did Trang spend testing?
  4. What did Trang add to make the paper stronger?
